Cherry and Oat Energy Bites

The most exciting part of my week is usually Sunday evening when I whip up my homemade energy bites for the week. The fact that that is the most thrilling part of my week either means I have a sad social life, or I make REALLY good energy bites—you choose which.

So last weekend I was spending my Saturday night on Pinterest like any 20-something girl would do, when I spotted this delish recipe from the Vintage Mixer. I immediately knew I would be making my very own version of these Cherry and Oat Energy Bites the next day.

You see, ever since I got my Ninja Kitchen food processor, I am ALL about mixing it up in the kitchen—literally. It’s been a super fun journey into raw eating and now I have a cupboard full of nuts and superfood ingredients that I can use in recipes. The different combinations are so fun to try—just do an ‘energy bites’ search on Pinterest and you’ll be occupied for days.

Now back to this recipe—I switched things up a tiny bit from what the Vintage Mixer had in her blog. Check it out below.

Ingredients:

  • 3/4 Cup Oats (I used Bob’s Red Mill Gluten-Free Oats)
  • 1 Tbsp. flax seeds
  • 1 Tbsp. hemp seeds (I use Navitas Naturals)
  • 1/2 Cup almonds
  • 1/2 Cup cashews
  • 1/4 Cup pecans
  • 6 medjool dates, seeds removed
  • 2 Tbsp. raw honey
  • 1 ½ Tbsp. coconut oil
  • 1/2 tsp. vanilla extract
  • 3 drops liquid stevia
  • 1/4 tsp. sea salt
  • 1/4 Cup dried cherries (I was generous with these babies)

Instructions:

1. Place the oats, flax seeds, hemp seeds, and nuts in the food processor. Mix until it becomes a coarse meal.

2. Add the dates, raw honey, vanilla extract, liquid stevia, sea salt and coconut oil. Pulse in the food processor until the mixture becomes sticky to where you would be able to form into a ball.

*Tip: if your mixture seems too wet, add some more oats in.

3. Once the mixture seems like it will clump together easily, it’s time to add the dried cherries. Add them in and only pulse a few times—you want them to chop up a little bit but stay in little chunks in your energy bites.

4. Once the dried cherries are combined, it’s time to roll your bites! Line a large plate or pan with parchment paper. Next you’ll want to scoop up a spoonful of the batter into the palm of your hands and make a ball shape. I use a scooper batter spoon to help out with the process—it allows me get a consistent amount with each energy bite.

5. Place the rolled bites into the fridge and let cool for at least 30 minutes. Store in an air-tight container; layer with parchment paper to prevent the bites from sticking together.

You’re going to love treating yourself to this healthy snack throughout the day. It almost takes like a vanilla oatmeal cookie, but you don’t have the guilt. Now that’s what I call success!
